Candy Cane Kiss Cookies

Okay, so this blog post isn't at all triplet related, but I've had a few requests for this recipe and thought I'd put it up here so people could share it and refer back to it any time.  Michelle and I created this recipe a LONG time ago, well before these babies were even a twinkle in our eyes!  I don't even remember where we got this idea, but I think we had just discovered the candy cane kisses (maybe they had just come out?! I think it was 2006?) and were more than a little obsessed with them.  (I still am and tend to eat more than my fair share when making these cookies!)  Anyway, neither of us are big fans of the standard peanut butter kiss cookies so we decided to try to make a cookie just like those, only using the candy cane kisses.  Our first couple batches were plain chocolate cookies with the candy cane kisses, but once we added a touch of peppermint extract to the batter and rolled the balls in sugar the magic really started to happen.  Now, I will say that these cookies don't always stay as puffy and perfect looking as the standard PB ones, but they are melt in your mouth delicious and I don't think anyone will complain. =)

Okay, here's the recipe!

Mari & Michelle’s Candy Cane Kiss Cookies
1c.  butter (softened)
2c.  sugar
2t.  vanilla
2     eggs
¼ t. peppermint extract
2½c. flour
¾ c. cocoa powder
1t. baking soda
½ t. salt
1/4c. sugar (to roll balls in)

1. cream butter and sugar together until fluffy
2. add eggs, vanilla, & peppermint  and mix well
3. sift in dry ingredients and mix
4. roll dough into tsp size balls
5. roll balls in a bit of sugar to coat
6. bake at 350 deg for 8-10 mins
7. let cool a bit then push candy cane kisses in center
(the last step is the trickiest one...you may have to experiment a bit to get it just right.  You want the kiss to melt just a bit, but not dissolve into a puddle...though, personally, I like the puddle cookies the best!)

We had some big plans to submit this recipe to some kind of recipe contest, but here we are 8 years (or more) later and we still haven't done it.  And now that we have three babies, I don't see that happening any time soon!  So we hope you enjoy the cookies!  We have made a "no desserts except at parties/social events" rule for ourselves for December because it was getting a little out of hand around here, so now we NEED someone to invite us to a social event so we can make these this year!! =)  If all else fails we can make them for our families. =)  Better add some candy cane kisses to our shopping list so we are ready when the invite comes!
